FLAMING STEW

Last year I posted a thread asking what the stew was that was served on fire, well this year I had one in the Lemon Tree, it was listed on the menu as a special Kebab and very nice it was too. When it comes out of the oven the ceramic pot is glowing red and on fire, the top of the pot is sealed with an whole onion to keep the juices in, it went down a treat on a cold october night. I think Kemal at the Lemon Tree called the meal Anfora Kebap

Anatolia is cooked in an open pan as in a wok so Anatolian WOK kebap.

Anfora kebap is cooked in a amphora hence the name Anfora kebap :lol: :lol: :lol: :lol: :lol: :lol: :lol:

Now if someone had asked about Borsch, Okroshka, Pelmeny, or even chicken Kiev :lol: :lol: :lol: :lol: then Rami you would definitely have known the answer.
